I am finding it hard to feel inspired this week. However, here is our (possible) meal plan for the week:
M: Moroccan chickpeas & couscous
T: Ginger stir-fry with tofu & Asian greens with soba noodles
W: Tempeh burritos with guacamole and salsa (Feeding the Whole Family)
T: Spinach triangles with salad (Vegan with a Vengeance)
I have also been making gingerbread - one of my favourite Christmas traditions. Photos of Lily 'decorating' said-gingerbread to come tomorrow...
